Since 2004, Chef´s have been celebrated every October worldwide. This month was chosen by the World Association Of Chef Societies (WACS). The World Culinary Association is a professional organization founded in 1928 in Paris.
95 years later, we congratulate and recognize our Chef Carlos Peregrina Serralde, Executive Chef of Alea, Mereva and Nerea, in the hidden and quiet Bahís Tankah. Carlos has the culinary heritage of Puebla, which he developed and diversified during his studies at the University of the Caribbean in Cancun; taking his family’s seasoning to the United States, Los Cabos and now Tulum. With a fresh, natural and healthy tendency, Chef Peregrina’s gastronomy respects flavors, shapes and colors of all ingredients, although this does not prevent him from being creative and offering from a delicious yaca barbecue for vegans, to a light hamburger with sweet potato bread. Healthy cooking is a trend that we follow and develop with passion and creativity.
Tz’Onot in Alea offers Mexican dishes like you would taste in a magical village or at grandma’s house. Bsky in Mereva, offers salads, pastas, wood-fired pizzas in our stone oven, as well as our famous brisket with 16 hours of cooking and our infallible short rib. Umbal, in Nerea, offers healthy, gluten-free, reduced sugar and salt options, as well as vegan dishes.
