Since 2004, Chef´s have been celebrated every October worldwide. This month was chosen by the World Association Of Chef Societies (WACS). The World Culinary Association is a professional organization founded in 1928 in Paris.

95 years later, we congratulate and recognize our Chef Carlos Peregrina Serralde, Executive Chef of Alea, Mereva and Nerea, in the hidden and quiet Bahís Tankah. Carlos has the culinary heritage of Puebla, which he developed and diversified during his studies at the University of the Caribbean in Cancun; taking his family’s seasoning to the United States, Los Cabos and now Tulum. With a fresh, natural and healthy tendency, Chef Peregrina’s gastronomy respects flavors, shapes and colors of all ingredients, although this does not prevent him from being creative and offering from a delicious yaca barbecue for vegans, to a light hamburger with sweet potato bread. Healthy cooking is a trend that we follow and develop with passion and creativity.

Tz’Onot in Alea offers Mexican dishes like you would taste in a magical village or at grandma’s house. Burnout? Time for a break!

Burnout syndrome refers to the chronification of work stress that results in a feeling of generalized exhaustion. Feeling exhausted? Take advantage of our burnout break promotion at Alea Tulum to reboot yourself and return with new energy to your work.

Burnout syndrome or “burned-out worker syndrome” refers to the chronification of work stress. It manifests itself through a state of physical and mental exhaustion that is prolonged in time and even alters the personality and self-esteem of the worker. It is a process in which the worker progressively suffers a loss of interest in his tasks and develops a negative psychological reaction to his job. What are the main symptoms of burnout syndrome? Can it occur in any profession? How can it be prevented?

Main symptoms of burnout syndrome

According to OSHAThis link will open in a new window, burnout syndrome was originally identified to a greater extent in those professions that are related to dealing with the public and customers (also called social exposure). However, it can occur in any occupation since there is a greater risk of suffering from burnout syndrome when there is a great discrepancy between the worker’s work expectations and the reality of the tasks he/she faces on a daily basis, or there is a work environment with excessive stress, degraded and/or with manifestly conflictive work relationships.

The main symptoms of burnout syndrome are the following:

The worker suffers a loss of energy at all levels of health:

Signs of physical exhaustion: chronic fatigue, weight gain or loss of appetite. It can also be reflected in the appearance of psychosomatic disorders such as muscle pain, migraines, gastrointestinal problems and, in the case of women, dysregulation of the menstrual cycle.

Signs of mental exhaustion: stress and anxiety are the main protagonists preceding burnout syndrome. Moreover, burnout feeds on both, as well as being related to the appearance of adaptive disorders, related to stress, anxiety, depression and insomnia.

2. Depersonalization and cynicism

Burnout produces a change in the behavior of the worker who suffers from it. They adopt an attitude of indifference and detachment, clearly reducing their commitment to work. This is also manifested in their relationships in the workplace, both with colleagues and customers. Irritability and hardening of the treatment become habitual tonics within the way of acting of a burned-out worker, the clients, users or people with whom they interact perceive this change of attitude, but also the family and their social environment…

3. Decrease in labor productivity and demotivation

The two previous points lead to a drop in work productivity and demotivation that generates frustration and shows a lack of personal fulfillment at work. There is a lack of attention to tasks, frequent forgetfulness and a generalized idleness that arises from the difficulty to concentrate. All this is part of a vicious circle that constantly feeds back on itself (he never manages to be the worker he was before burning out and this generates greater suffering), since the inability to comply with the work, concentrate, manage his activities, etc., does not allow progress in the ever-increasing “pile of pending tasks”.

How to cope with burnout syndrome?

The burnout syndrome is the result of different causes. It usually appears when personal risk factors coincide (low tolerance to frustration, exposure to stress, or stressful life circumstances such as caring for the sick, serious illnesses, losses, etc.) and those related to the organization (gaps in the tasks assigned to the job, oversizing of functions and responsibilities, complicated work environment, leadership failures in the company, sustained work overload, care pressure, lack of support and resources, etc…).

Preventive measures against burnout syndrome are similar to those necessary to manage situations of work-related stress. In order to reverse a situation of “worker burnout” it is crucial to identify and modify the working conditions that have produced it, and in cases of prolonged exposure it may be necessary to relocate the worker, psychological counseling or support in the workplace to rectify the acquired habits.

World Environmental Health Day is celebrated on September 26th!

We celebrate the World Environmental Health Day this September 26 at Alea Tulum, an event of vital importance aimed at ensuring the sustainability of ecosystems for the health of current and future generations.

It also aims to raise awareness among the world’s population about the importance of caring for our planet, its natural resources and the species that inhabit it.

We are happy to collaborate by placing hearts on the beach, made by Tulum artisans for tourists to put the bottle caps on. We donate them to an institution that sells them to help cure children with cancer. At the same time, we avoid polluting our oceans with plastic.

Origin of World Environmental Health Day

The creation of this ephemeris, in 2011, was an initiative of the International Federation on Environmental Health (IFEH).

Its purpose is to raise awareness and sensitize the world’s population about environmental health.

This organization has its headquarters in London and brings together more than 44 member states. Its work is oriented towards scientific and technical research in the field of environmental health.

What is environmental health?

According to the World Health Organization (WHO), environmental health is the discipline that studies, prevents and controls environmental and environmental factors that can influence living beings.

It emphasizes the prevention and control of those factors present in the environment that may affect the human health of current and future generations.

Some of these environmental factors that affect public health are the following:

On the other hand, environmental health is considered an essential public policy, aimed at preventing and reducing the appearance of diseases caused by inadequate environmental conditions.

In this sense, it promotes health protection and disease prevention to improve people’s quality of life.

Theme 2022: Strengthening environmental health systems for the implementation of sustainable development goals

At the annual celebration of World Environmental Health Day, a central theme or slogan is selected. For the year 2022 the theme is called “Strengthening environmental health systems for the implementation of the Sustainable Development Goals”.

This slogan is intended to raise awareness of the fundamental role of environmental health in the implementation of the Sustainable Development Goals (SDGs), contemplated by the United Nations in the 2030 Agenda for Sustainable Development.

Some slogans from previous years of this ephemeris are the following:

Year 2021: “Prioritize environmental health for healthier communities in global recovery”.

The History of Chiles en Nogada

It is in the month of September that this dish takes an important place in the menus of many Mexican restaurants. Originally from Puebla, its origin dates back to the end of the Mexican War of Independence in 1821, the year in which Agustin de Iturbide traveled to Veracruz to sign the Act of Independence. As he would pass through Puebla, Bishop Antonio Joaquin Perez Martinez received him with a great banquet with the 14 most outstanding dishes of Puebla’s gastronomy.

It is said that the Augustinian nuns of the Convent of Santa Monica, contributed this already existing dish known as “chiles rellenos en salsa de nuez” and for the occasion, a creative nun added pomegranate seeds and parsley leaves, representing the colors of the Trigarante flag.

The sweet-salty aromatic flavors of the now famous Chiles en Nogada contain ingredients such as walnuts, cheese, milk, sugar, wine, beef, pork, peaches, pine nuts, apples, capers, olives, parsley, cloves, cinnamon, onion and garlic. Acitron used to be used in the past, but the cactus from which it was made is in danger of extinction and its consumption is regulated.
